I decided to make this post about Call of Cthulhu resources since I am compiling them for myself anyway! This resource post is meant mostly for Keepers (Game Masters), but Investigators (Players) can definitely find useful things here as well.
That's all I can think of at the moment but I'll definitely add more if/when I discover more.
Official Stuff:
Quick Start Guide (7th Edition) - Most of what you'll need to pick up and start playing classic CoC, 50 pages briefly covering how to make a character and how the game system works.
Conversion Guide to 7th Ed. - Guidelines on how to covert adventures and investigators created for older editions (5th and 6th) into 7th.
Short Introductory Adventures - Alone Against the Flames (a solo adventure, aka play by yourself with no Keeper), Dead Border (extended demo scenario), The Lightless Beacon (standalone introductory scenario), and a link to the QuickStart guide which also contains The Haunting (another standalone intro scenario).
Fillable Character Sheets - PDFs of character sheets that do the math for you, has sheets for Classic 1920s cthulhu, 21st Century Modern, Pulp, etc. (though I personally just made a google doc template and shared it with my players because I find that more accessible from different devices).
The Dholes House - Contains character creation+sheet management tools, handout generators, and a bunch of other tools including a library of NPCs!
Call of Cthulhu Wiki - Chaosium's official wiki, contains rules overviews, a Bestiary for monsters, and a really useful Weapons table (as well as other item/equipment tables).

Fantasy Names Generator - Honestly I use this one a lot for writing in general, but it's got a section specific to Lovecraftian monsters and one for 20th Century english names. They've got a buuuunch more other pop culture and real life name generators though, highly recommend looking around.
I myself did a brief-ish write up of the rules on Notion to more easily share with my players, it is more detailed than the Quick Start Guide but doesn't include stuff that is only relevant to Keepers like the Grimoire or Bestiary sections found on the Core Rulebook or the wiki, anyone interested can find it Here, and other Notion users can just duplicate the template and make it your own.
CoC Reddit - The Cthulhu community on reddit, pretty nice for finding advice and people promoing their adventures.
u/Triphoprisy's Resource Folder - I linked to the reddit post rather than the folder itself because there are some other really useful links in the comments. Anyway this folder contains a lot of advice for Keepers and plot ideas/hooks, it also has some really good advice for character creation to make complex Investigators.
Quick and Dirty Cheatsheet - 3 page PDF with important rules one might need to reference in a rush.
Calligrapher.ai - A handwriting simulator.
Roaring Twenties Guide - A really good settings overview for the 1920s (US-centric). Actually, the site itself also has some really good tools like a Chase Generator/Tracker and an Occult Script Generator for making SAN loss-inducing handouts.
GitHub Repo: 1920s Settings Primer - A really quick primer on the Classic Cthulhu 1920s setting. It's also got a very nice Rules Primer aimed for players specifically to get them to understand the game system and how it differs from D&D.
